Last year for some reason some of the jansens I bred were very early jumping from the boxes, They were feathered under the wings but there were a few pins also so they werent fully formed, But I took them from the boxes and weened them, they really were advanced and were drinking that day. I think some families are just like that, and others a bit bit slower.

yes some mature quicker than others

some youngbirds i have put over at 21 days others around 25 days

when i first started 2 yrs ago i parted them at 30 days......but decided they were better a few days earlier providing they were reasonably covered and eating and drinking ok.....

Foe me as soon as they started to eat themselfs then move them

Or even when then parents start to knock them out of the box

But for me the same as Ian 21 to 25 days max
